Mayhap's pastry in Forgotten Pleasures, it folds cherry, cinnamon and cardamom into a brioche accord, adds saffron and a thread of incense smoke, and sets it all on tobacco, leather and tonkalactone, a gourmand with more spice and smoke than sugar.
